Quick and easy meal ideas
1. Quick Veggie Stir-Fry
Ingredients:
- 1 tbsp olive oil
- 1 cup broccoli florets
- 1 bell pepper, sliced
- 1 carrot, julienned
- ½ onion, sliced
- 2 garlic cloves, minced
- 2 tbsp soy sauce
- 1 tsp sesame oil
- Salt and pepper to taste
Recipe:
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add the garlic and onion and sauté until softened, about 2 minutes.
- Add the broccoli, bell pepper, and carrot. Stir-fry for about 5-7 minutes until vegetables are tender-crisp.
- Pour in soy sauce and sesame oil, and stir well.
- Season with salt and pepper to taste.
- Serve hot over rice or noodles.
2. Egg Fried Rice
Ingredients
- 2 cups cooked rice preferably day old)
- 2 eggs scrambled)
- 1/2 onion, diced
- 1 cup mixed vegetables peas, carrots, corn
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp vegetable oil
- Salt and pepper to taste
Recipe
- Heat vegetable oil in pan. Scramble eggs and set aside.
- In the same pan, add sesame oil and sauté onions until soft.
- Add mixed vegetables and cook for 3-4 minutes.
- Add cooked rice and soy sauce, stir-frying to mix everything together.
- Add scrambled eggs back in and season with salt and pepper.
- Serve hot.
